First taste of bizarre Scandinavian culinary pairings: shrimp and hard boiled egg. This was our lunch on the flight from Copenhagen to Bergen. It was billed as a "traditional, Danish open-faced sandwich". There was a piece of brown, densely-seeded bread slathered with margerine, two slices of mystery meat, a handful of shrimp, a sliced egg and a bit of spread that was purplish and green which tasted kind of familiar, but I still have no idea what is was. I tried everything, then ate the egg and bread. Dessert was a rhubarb crumble. Bob got salmon in his sandwich instead of shrimp, and a cup of very airy stark-white fluff (kind of like meringue that hasn't been beaten for very long) with pear-flavored gel and chocolate curls. The coffee was excellent.
